Question about DLC

Is the DLC always available in each new game or is there somewhere that you select what DLC you want available or not?

In game I don't think you can select what DLC will be used, but in Steam you can uncheck the DLC from the installed list and that would remove it..

If you have the DLC, then the content will automatically show up in your game.
