Today I killed two giants with a 7th level wood elf on Skyrim behind a rock. My concentrations are sneaking, heavy armor, and one handed fighting. I had fine imperial equipment. A nordic bow with Iron arrows. My game had no cheats. I wasn't part of any guild. This was at the Giant camp.

You can do that with some mammoths too. They get stuck behind trees pretty easily. The smaller than giant sized animals like the dreaded Bears or saber cats or wolves seem to have better pathing and will find their way around rocks or trees to get you.
